Mielie Cake Recipe

Ok, so during our lockdown due to the COVID-19 pandemic, we've been trying out numerous new baking and cooking recipes, just like the rest of the world that is in lockdown.

Trying new recipes can be real fun when doing it with the family, especially young kids. No matter what their age, all kids enjoy baking, even teenagers (deep down, maybe deep, deep down).

So on our 11th day of lockdown, we decided to try out my aunt's recipe for Mielie Cake. She also gave us a few variations to the recipe, so I will let you know about those as well.

Before we start pre-heat your oven to 180 degrees celsius.



You will need:

1. About 4 to 6 sweetcorns
2. 1 cup butter
3. 2 eggs
4. 1/2 teaspoon salt
5. 1 teaspoon baking powder
6. 1 cup self-raising flour
7. 3/4 cup castor sugar

How to make it:

Grate the sweetcorn. Mix dry ingredients and wet ingredients (with the sweetcorn) separately and then combine and mix them both. Grease up a baking tray, pour in your mixture and bake for 15 to 20 minutes. Don't over bake as it will dry up the cake.

Variations:

Here are some of the variations that my aunt gave us. If you want to make the cake vegetarian, then you can substitute the eggs for vinegar. You can also increase your sweetcorn to 6 and cut out the self-raising flour, which gives you a pure mielie cake. But I like the flour option as the cake comes out fluffy and moist.
